This is a classic green minestrone ("big soup") of Genoa, filled with summer vegetables and Hoffman chicken, and typically eaten with a big dollop of basil pesto on top. Green beans, zucchini, eggplant, white beans, cabbage, and Massa Organics rice are simmered in a base of chicken broth with porcini mushrooms, garlic, onions, and just a few tomatoes.

This flavorful gelatin-rich broth is made from Marin Sun Farms grassfed beef bones and browned meat, filtered water, and a splash of apple cider vinegar. According to Dr. Thomas Cowan, "In healthy, traditional cultures, when an animal was slaughtered, all the parts were put to use, including the bones, to make mineral-rich broth. Our modern diet, having largely forgotten the use of broth as the basis of our cooking, is estimated to have less than half the mineral content of more traditional diets. This is a special 4-year aged Italian grating cheese that is certified organic (biologica) made according to tradition with the finest raw milk from grassfed cows. A 2 lb. bag of Summers Sprouted Spelt Flour is great for baking, and for making pancakes, waffles, and other homey favorites. This spelt flour was stoneground and shipped this week, and we are only offering 12 bags of it. Here's how Summers Flours describe their product: "Our Sprouted Spelt Flour is light-tasting with a slight malty taste. Spelt is low in gluten, but NOT gluten free...
